Healthy Black Bean Brownies

Everybody loves brownies, but regular brownies can pack a whopping 300 calories each or more! (And let’s be real, who eats only one??)

These brownies, on the other hand, are so much better for you! They’re tasty and delicious and packed with protein, but free from chemicals and preservatives that other store-bought brands contain.

The first time I made these brownies was in college, and I didn’t tell my husband (then boyfriend) or his roommates what was in the brownies. Instead, i told them I was making healthy brownies and they had a special ingredient that they had to guess. AND THEY LOVED THEM! No one could guess that the secret ingredient was black beans and they all had more than one.

Healthy Black Bean Brownies

Ingredients

  • 1 (15 oz.) can of organic black beans
  • 3 eggs
  • 3/4 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup dark chocolate chips
  • 1/2 cup raw honey
  • 2 Tbs. powdered Stevia
  • 1 tsp. vanilla
  • 1 pinch of sea salt

Instructions

  1. Preheat your oven to 350 degrees.
  2. Spray an 8X8 inch baking pan with olive oil or coconut oil and set aside.
  3. Place black beans in a strainer and rinse and drain beans.
  4. Place black beans in a food processor or blender and add eggs and melted coconut oil.
  5. Blend until smooth.
  6. Add cocoa, Stevia, honey, vanilla, and salt and mix thoroughly.
  7. Stir in chocolate chips by hand and pour mixture into baking dish.
  8. Bake for 30 minutes. Brownies will be done when toothpick or knife inserted in the middle comes out clean.

Tips: Feel free to substitute the honey for maple syrup or agave nectar for a different taste. You can also add different mix-ins other than dark chocolate chips. Get creative and come up with your own delicious concoctions!
