I have been on a serious baking binge lately, and because I have two babies two and under, most of these recipes include bananas. All of you moms out there know exactly what I’m talking about!

If you’ve check out any of my other recipes, you’ve probably gathered that I like to prep things ahead of time and have them ready to go on busy mornings and these muffins are no exception.

Not only are they absolutely delicious, but they’re gluten free, sugar free, and low carb to boot! And did I mention they taste JUST like banana bread?? Are you drooling yet?

Gluten Free Banana Nut Muffins

Ingredients

  • 1 3/4 cup almond flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/4 cup baking stevia
  • 1/4 tsp. sea salt
  • 3 ripe bananas, mashed
  • 3 eggs
  • 1 tsp. vanilla
  • 2 Tbs. olive oil
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 375F degrees.
  2. Line a muffin tin with cupcake wrappers and spray with olive oil to prevent sticking.
  3. Mix together almond flour, baking soda, baking powder, cinnamon, stevia and sea salt and set aside.
  4. Mix together mashed bananas, eggs, vanilla, and olive oil in a blender and then add your dry ingredients and mix well.
  5. Pour the mixture into the muffin tin cups 3/4 full.
  6. Sprinkle with chopped walnuts (optional).
  7. Bake for 20-25 minutes and check by inserting a toothpick and making sure it comes out clean.
  8. As soon as they are done baking, flip them onto a cooling rack and let them cool.

TIPS: Lining the muffin tins with cupcake wrappers makes it so much easier to get them out later.

You can also use whatever kind of oil you like. I happened to have olive oil on hand, but you can use coconut oil or anything else you would like.

Really want to mix things up? Try different toppings like craisins, pecans, or even a drizzle of honey. Sounds delicious!
