Make Ahead Breakfast Burritos

If you’ve read my Mom Hacks: Meal Prep post, you’ll remember that I mentioned make ahead breakfast burritos for my husband to take to work. I wanted to break it down for you and explain exactly how to make these easy burritos and how much easier it can make your busy mornings. Follow the recipe and make sure to check out my tips and tricks for making them!

Breakfast Burritos

Ingredients

  • 2 large russet potatoes
  • 1 dozen eggs
  • 1 lb. turkey sausage
  • 8 oz. shredded cheddar cheese
  • 16 count extra-large tortilla wraps
  • Hot sauce (optional)
  • 1/4-1/2 cup water
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • Parchment paper

Instructions

  1. Spray a large skillet pan with olive oil.
  2. Peel and dice the potatoes and put them in the skillet pan and sprinkle with salt, pepper, and garlic powder.
  3. Add 1/4-1/2 cup water to the potatoes and cook over medium heat with the lid on to soften the potatoes.
  4. Brown the turkey sausage in a separate skillet pan over medium heat.
  5. Once both are cooked, put the turkey sausage into the pan with the potatoes.
  6. Scramble all 12 eggs and add salt, pepper, and garlic powder to taste.
  7. Once the eggs are cooked, combine with the potatoes and sausage and mix together well.
  8. Rip off a piece of parchment paper about the same width of your tortillas, and set it down first.
  9. Place a tortilla wrap on the parchment paper and 1 scoop of the potato, sausage and egg mixture.
  10. Sprinkle a layer of cheddar cheese on top and hot sauce to taste.
  11. Fold in the sides of your tortilla and roll the burrito.
  12. Fold the parchment paper around the burrito tightly and store in gallon freezer bags.
  13. Place in the freezer until ready to eat.
  14. To Thaw: Take one burrito out of the freezer and unwrap from the parchment paper.
  15. Place in the microwave on a paper towel for approximately 2 minutes.
  16. Be careful removing the burrito from the microwave, as it will be very hot!

Tips: You can substitute any of the ingredients listed depending on what you like to put in your burritos, but all of the ingredients listed work well for freezing. If you are commuting to work, as my husband does, after you remove the burrito from the microwave, you can wrap it in foil to keep it warm. Be careful though, because the package will still be hot!

This recipe usually makes 12-15 burritos, depending on how full you make them. If you add or subtract any of the ingredients, this may alter the number of burritos you are able to make.

When you buy the 16 count package of tortilla wraps, you may end up with extra wraps. You can freeze them and thaw them again by placing them in the refrigerator for a few hours before making the burritos again, or placing them one-by-one in the microwave on a plate with a damp paper towel on top and underneath for about 30 seconds.
