5 Easy Christmas Cookies For A Healthy Holiday Season

I just had to include buckeyes for my husband. Though they may not seem like a typical Christmas cookie, in mine and my husbands book, they qualify!

Ingredients

  • 1 cup all natural peanut butter (the runnier kind)
  • 10 medjool dates, pitted
  • 1/2 cup of your choice chocolate protein powder
  • 1 Tbs. cocoa powder
  • 2 Tbs. maple syrup
  • pinch of salt
  • 1 Tbs. coconut oil
  • 1/2 cup dark chocolate chips

Instructions

  1. Place peanut butter, dates, protein powder, cocoa powder, maple syrup and salt in a blender and blend until you've broken down the dates and consistency of the mixture is dough-like.
  2. Scoop out a tablespoon of dough at a time and roll it into a ball with your hands.
  3. Place each ball onto a parchment lined cookie sheet and place in the freezer.
  4. Once you've finished making the balls, mix your coconut oil together with your chocolate chips and microwave in 30 second increments until just melted.
  5. Once the balls are firm, remove them from the freezer and dip them into the chocolate and back onto the cookie sheet.
  6. Add holiday sprinkles if you'd like before the chocolate sets.
