One Pot Meals: Chicken, Spinach and Quinoa

As a busy mom, i don’t have the time or the energy to want to clean an entire kitchen full of dishes every night. So the more I can cook in one pot, the better. One pot to clean sounds way better than 6, especially if you can put it in the dishwasher! This is one of my favorite recipes because it’s healthy, delicious, and only takes a few ingredients. Try it for yourself tonight!

1 Pot Meals: Chicken, Spinach and Quinoa

Ingredients

  • 3-5 raw chicken breasts, diced
  • 1-2 handfuls of raw spinach leaves
  • 1 cup quinoa
  • 2 cups low-sodium, organic chicken broth
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • Spray olive oil

Instructions

  1. Spray a large skillet with olive oil.
  2. Place diced chicken into the skillet over medium heat and add salt, pepper, and garlic powder.
  3. Cook chicken until cooked through and add chicken broth to the skillet.
  4. Add the quinoa and stir the skillet to make sure most of the quinoa is in the broth.
  5. Bring the broth to a boil and then reduce the heat to low.
  6. Add the spinach leaves on top of the chicken and quinoa mixture and put a lid on the skillet.
  7. Watch the skillet closely and stir every few minutes to prevent the quinoa from sticking to the bottom of the pan.
  8. Once the broth has been absorbed, the quinoa is fluffy, like rice, and the spinach is wilted, your dinner is ready to enjoy!

Tips: This is my favorite version of this recipe, but you can play around with your own and mix and match the ingredients for others you like. For example, you could swap out the chicken for beef or the spinach for another vegetable you like. If you’re not big on quinoa, try wild rice. But if you’ve never had quinoa, I would encourage you to try it. It’s just like rice, but it’s so much better for you! It’s loaded with protein and delicious!
