gluten free waffles with blueberry syrup

Homemade Blueberry Syrup

This is my favorite way to eat waffles and pancakes! It’s an all natural fruit syrup that is super easy to make and will be ready in the same amount of time it takes to make your waffles or pancakes. If you need a delicious, healthy waffle recipe, see my Gluten Free Waffle recipe.

Homemade Blueberry Syrup

Ingredients

  • 2 Cups frozen blueberries
  • 2 Tbs honey
  • 2 Tbs Stevia

Instructions

  1. Add all ingredients to a small sauce pan and bring it to a boil.
  2. Stir occasionally to avoid burning the syrup or allowing it to stick to the bottom of your pan.
  3. Reduce to simmer and cook for 15-20 minutes until it has thickened and reaches your preferred consistency.

Tips: You can use any type of frozen berries to make this syrup. Smaller berries like blueberries, raspberries and black raspberries work best to make a thicker syrup, however you can use strawberries and other fruit, but you may need to reduce it longer to get a thicker syrup.

You can also adjust the amounts of honey and stevia to suit your taste.

This recipe is very easy to make more or less according to your needs.

Bonus Tip: If you let the syrup reduce even further, it will thicken enough to use as a fruit spread or jelly, delicious on toast or sandwiches!
