Cheesy Chicken and Broccoli

When it comes to comfort foods, no one can turn down warm, gooey, cheesy deliciousness. This is one of my favorite recipes because it makes you feel like you’re eating comfort food, but it’s actually pretty good for you. And if you up the broccoli and chicken ratio, it’s even more nutritious.

And did I mention it’s cheap? Better yet, this meal is another one-pot wonder which makes this momma VERY happy come clean up time! Make this as a part of a hearty family meal, or just as a simple weeknight treat and your family is sure to love it!

Cheesy Chicken and Broccoli

Ingredients

  • Spray olive oil
  • 8 oz. chicken breast
  • 1/2 tsp. sea salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 2 cups chicken broth
  • 1/2 cup chicken broth set aside
  • 2 cups wild rice or brown rice
  • 1 bag of frozen broccoli or 1 small head of broccoli florets
  • 4 oz. cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Start by spraying your pan with olive oil.
  2. Dice up your chicken breast, season it with the salt, pepper and garlic powder and cook them over medium heat until cooked through. (You can also cook the chicken whole and shred it if you would like)
  3. Add 2 cups of the chicken broth to the chicken to help deglaze the pan and add the rice.
  4. Bring the broth to a boil and then reduce the heat to low to allow the rice to soak up the broth.
  5. Add the other 1/2 cup of chicken broth and broccoli florets and cover with a lid to allow the broth to steam the broccoli.
  6. Once the broccoli is fork tender, add the cream cheese, mozzarella cheese, and parmesan cheese.
  7. Continue to cook until all the cheeses are melted and gooey and mixed well into the chicken, broccoli and rice.
  8. Enjoy!

Tips: You can also make this dish with similar ingredients if you don’t like the ones used here. For example, you can switch the chicken for steak, switch the rice for quinoa and switch the chicken broth for beef broth and have your own cheesy steak goodness.
